Avocado Corn Dip

Admittedly, this looks like someone puked up their Chipotle.

But I promise you, this is really tasty. The combo of avocado, corn, brown sugar, hot sauce, lime juice, and spices is surprisingly awesome.

Also, this is the recipe halved. Think how much you could make with the full recipe!

My mom actually made a really cool suggestion with this. She put it on a wrap with some grilled chicken and she said it was awesome. So, this could be used as an avocado sandwich spread type thing as well.

It looks a little better close up right?

Anyway, give this one a shot, especially if you’re a big avocado fan like me.

(Note: This site also has a recipe for homemade tortilla chips. I didn’t do that, but if you do, let me know how they turned out!)

Easy Cheese Danishes

image

Holy shit these were really good. And yes, as the name suggest, quite easy to make. The danish part is made up of crescent rolls and then you make the filling.

The hardest part was working with the crescent rolls. You have to roll them out, connect two together, put the butter and brown sugar on them, then roll them up and coil them around. By the time I got to rolling them up, they were starting to get hard to work with. They were sticking to the wax paper, to my hands, etc. But, once they were coiled up and on the baking sheet, the rest was easy.

As for the glaze that goes on top, I think I would use one of my other recipes for that. This wasn’t bad, I’ve just made better.

But if you need something really quick that tastes awesome, make these.

Grilled Cheese Pizza Sandwich

image

So. This isn’t really a recipe per se. More like an awesome grilled cheese. It has pizza sauce, mozzarella, pepperoni, and basil. And, it is really good. I’ll probably make them again, but I think I may want to put more pizza sauce on it. I could’t taste it as much as I could everything else. Regardless, the receives my grilled cheese stamp of approval. Go make this.

I’m Back!

Whoever said that your last semester of college is a complete blow-off is on crack.

Anyway. Now that all that’s over and I have a college degree and all that jazz, I can get back into cooking! I don’t know about you, but I’m super excited about it.

Until then!
