Spinach and Artichoke Grilled Cheese


We all know I love me some spinach and artichoke dip. And I love me some grilled cheese. So duh I had to try the recipe that combined them together.

Making the spinach/artichoke mixture was easy enough. I made the mistake though of using frozen, not fresh spinach, and I didn’t really measure the amounts of the spinach or the artichokes. Therefore, there was more spinach, and not enough of anything else, which I think affected the whole thing.

But, I kept going. So I assemble the grilled cheeses, and the first flip is the hardest part. And it never goes really well for me. And this time was no different. It wasn’t horrible, but it wasn’t pretty.

So, I think I could have made these better, but I still ended up only eating one. 😦 If anyone tries these, let me know what I did wrong haha




Skinny Baked Mozzarella Sticks

Guys. Not only are these mozzarella sticks that you can make at home, but these are mozzarella sticks that are vaguely healthier than normal! Total win-win situation here.

Also, another plus, they’re pretty easy to make! You take some string cheese, dip it in some stuff and bake them. Bam. That easy. I wish I would have had mine in the oven for a little longer because they were still a little firm in the middle. But they tasted great nonetheless. I may have eaten more than half in one sitting. (And it was still only about 650 calories. What.)

Plus I dipped them in some pasta sauce (because I had that laying around and not marinara) So. Good.



Strawberry Cheesecake Cookies


I closed a show recently, and I brought these to our final night, and they were a hit! They’re fairly easy to make, and the fresh strawberries really make a difference.

I will say though, they have an interesting texture. They never fully harden, like a normal cookie. It’s probably because of the cream cheese in the recipe. A fun tip is to put them in the fridge and then eat one, so good!

But give this one a shot if you’re looking for something a little different that’s still pretty easy to make.
