Healthy Chicken Parmesan Burgers

So, I’ve been so busy these last few weeks, this was not only my first opportunity to make something, but also my first opportunity to even buy groceries in three weeks.

Trust me when I say that my fridge and cupboards were extremely sad looking.

But, I think it all worked out for the better, because it was so nice to just have an hour to make some dinner. Although finding ground chicken was an adventure in itself. (Had to get it for $8 a pound at Whole Foods…)

The recipe is simple enough, you just combine everything together into patties. Which is all well and good but I don’t think I’ll ever love hand mixing patties. Pop them in the fridge, grill them, ta da!

I did add the cheese to them on the grill in the last minute, so the cheese would get super melty. Yum.

Also, I googled the difference between marinara sauce (what the recipe recommends) and tomato sauce (all I was finding at the store) and a couple sources I found said that there was not really a difference.

Upon tasting, there is totally a difference. The tomato sauce isn’t bad, but I think I would have preferred marinara.

Overall, a pretty quick chicken burger that was really good! I would definitely make these again.
