Pepperoni Pizza Quesadillas


I’ll be honest, this is the laziest I’ve probably ever been with a recipe. I read it once, said “cool” and just went from there.

Firstly, I had 6 tortillas, so I grabbed some more at the store, got back, realized I bought burrito size instead of regular fajita size. So, I decided I was only making 6 quesadillas.

Then, I didn’t fry the pepperoni. I didn’t understand the point of that, so I just skipped that step.

Everything else, I did as the recipe suggested.

Until the cooking time.

I put the first one in on medium heat for 3 minutes. (The recipe says 3-5). When I went to flip it, it was burnt to a fucking crisp. Completely unsalvageable. So I unfortunately had to toss that one out.

I cooked the remaining quesadillas on low heat for about 2-3 minutes, which seemed to do the trick. So, that’s my recommendation for that.

Once they were done, they weren’t too bad. A good idea for a quick dinner.

Pizza Muffins


Last night, my roommates and I hosted an “Apps and ‘Sserts” NYE Party. For those of you who are Parks and Rec fans, you hopefully get the reference. But basically, we had a little potluck where everyone brought wither an appetizer or a dessert to share, so this was my contribution.

I didn’t find any cubed pepperoni at the store, so I just got the little guys and tore them into fourths, so that seemed like it worked. The original poster also suggested adding salt and red pepper flakes, which I did.

Side story: I was mixing everything together, and was curious as to what the batter tasted like. Turns out I didn’t mix well enough, and just got a nice old hunk of red pepper flakes. That was a fun 5 minutes of my life.

Anyway. This is a really simple one if you’re looking for something in a pinch. It’s a “throw everything into a bowl, mix it, and then throw in the oven” type of recipe. I don’t have a mini muffin pan, which is what’s suggested, so I used a normal sized one, which made 10 pizza muffins. I wish I had a mini muffin pan,  because those 10 were gone within a half hour. Not everyone had even arrived yet, and they were gone. So, that’s a testament to how good they were. I just wish I had made more!

Chicken Ranch Pizza


This was probably one of the most low maintenance recipes I have ever done. The most cooking I actually had to do was cooking the chicken and then slicing it, along with chopping up some other ingredients.

So, the recipe says you can use either homemade or store bought crust. I went with store bought. Because god bless whoever has time to make homemade pizza dough, because it sure isn’t me.

I will say, the only thing I didn’t like was the parmesan cheese. I just don’t know if it mixed well with the cheddar. Also, I would have used more sauce. But that might be a personal preference.

Overall, this is a great dinner idea, and the leftovers lasted me a few days.


Chicken Ranch Pizza

Stuffed Crust Pizza Snacks

I’ve been making a lot of sweet things lately, so it was time for something savory. Also, I’m quite a big fan of pizza and its many forms. So, to me, these basically looked like homemade pizza rolls, I was totally in.

The process is pretty easy, but time consuming. You have to roll out the dough, cut it into individual squares, and then wrap them around individual pieces of cheese and pepperoni. I was conservative with how big the cheese cubes were when I cut them, but now I wish I would have just gone for it and put a ton of cheese in there.

Because, if you look at this picture, you can see the pepperoni, the cheese cube that melted into a layer, and then there’s a gap above it that’s just air between the crust. That gap could have been filled with a shit ton of cheese.

Anyway. I like the addition of the italian seasoning on top, it adds a little more flavor, but other than that, these are pretty straightforward. Nothing fancy, but still pretty good tasting. Probably even better with more cheese.



Pizza Snowballs

Not going to lie, I totally got this recipe from one of those blogs that’s like “Mommy and kid cook together!” But hey, they’re simple recipes that are normally super good, and this one fits both of those.

Think like bite size hot pockets minus the sauce on the inside, and you have these guys. Everyone really liked them, and they even started suggesting variations that would be good. My favorite was spinach and feta.

Anyway, back to this recipe, she suggests using the small, normal biscuits, instead of the Grands, and I second that. These were really well proportioned using the smaller ones. And I think next time I make them (which I probably will), I’m going to put even more of the filling stuff, the more the merrier right?



Grilled Cheese Pizza Sandwich


So. This isn’t really a recipe per se. More like an awesome grilled cheese. It has pizza sauce, mozzarella, pepperoni, and basil. And, it is really good. I’ll probably make them again, but I think I may want to put more pizza sauce on it. I could’t taste it as much as I could everything else. Regardless, the receives my grilled cheese stamp of approval. Go make this.
